Sabai is the debut original concept from the innovative team behind the acclaimed Uma Nota Manila—Alex Offe and Michael J. Needham. This newest venture sets a distinctive mark on the city’s dining scene, offering a truly authentic Thai culinary experience infused with profound cultural appreciation. The name “Sabai,” which means “relaxed” or “comfortable” in Thai, is reflected in every detail of the restaurant, from its inviting, thoughtfully designed interiors to its warm, attentive service. The ambiance blends cozy comfort with understated sophistication, encouraging guests to unwind and savor every moment. Interestingly, “Sabai” also echoes the Tagalog word “Sabay,” meaning “together,” symbolizing the restaurant’s vision of being a gathering place where people can connect, share vibrant meals, and create lasting memories in a welcoming and inclusive setting.

Leading the kitchen is Head Chef Puwadol Assavadathkamjorn, originally from Southern Thailand, whose culinary vision is to introduce Manila diners to the region’s authentic and often less-explored flavors. Chef Puwadol brings extensive international experience, having trained and worked at several acclaimed establishments such as the Michelin-starred Le Normandie by Alain Roux in Bangkok and Pru Restaurant in Phuket, Thailand’s only Michelin Green Star restaurant for sustainability. Notably, he was an integral part of the opening team at Sühring in Bangkok, contributing during its ascent to two Michelin stars, as well as its consistent top rankings in Asia’s 50 Best Restaurants and The World’s 50 Best Restaurants. Chef Puwadol further refined his craft as Chef de Cuisine at Loyrom, led by Chef Cuan Greene, previously of world-renowned restaurants Noma and Geranium in Copenhagen. At Sabai, Chef Puwadol combines traditional Southern Thai culinary techniques and ingredients—such as the bold use of herbs, fresh seafood, and vibrant curries—with contemporary cooking methods acquired through his global experience, delivering classic Thai flavors reimagined with a sophisticated, modern interpretation.

“I’m excited to bring the bold, soulful flavors of my home — especially those from the south — to Manila,” says Chef Puwadol. “At Sabai, we honour tradition and present it in an elevated way, using techniques I’ve learned in fine dining, but never losing the food’s heart or honesty.”

The menu at Sabai is a vibrant journey through Thailand’s diverse regional culinary traditions, inviting diners to experience the country’s rich gastronomic tapestry. Each dish is meticulously labeled with its specific regional roots, and crafted using authentic spices imported directly from Thailand. The kitchen uses rare herbs cultivated exclusively for Sabai, alongside crisp, locally sourced produce and premium ingredients, ensuring each plate bursts with genuine flavors.

The restaurant’s ambiance is the work of Hong Kong-based LC Studio, who have envisioned a space that is as inviting as it is striking. The expansive 124-seat layout includes two main dining halls and three intimate private dining rooms, accommodating groups from 6 up to 20 guests. The interiors showcase traditional Thai artistry—from intricately woven textures and radial motifs evoking Thai temples and crafts, to a refined, contemporary elegance in every detail. The two larger private rooms offer a lively twist with built-in karaoke systems, paying homage to the cherished karaoke culture shared by both Thailand and the Philippines, and providing an engaging entertainment option for guests.

Sabai’s carefully curated drinks menu features innovative cocktails infused with Thai flavors and a selection of craft beers, each chosen to complement and elevate the dishes’ nuanced profiles, creating a memorable dining and drinking experience.
